The game need to support this. Some games will explicitly switch to the default video mode and do not allow you to change that. Some others will use whatever mode the desktop uses. The simplest workaround I have found is to just run my games as a borderless fullscreen window; Very simple and non-intrusive, but itd be nice to run something without having to do this.
