You can leave enhanced sync off since you are using freesync with the fps cap however Radeon Anti Lag can be turned on. Actually I noticed the frame rate counter matches up to the fps in game when it goes under 237 fps

There are a lot of pros who use gsync in fortnite too. It really helps in fast paced games where you are moving your camera/view around a lot to always get a clear image with no tears.

Overshoot is a result of the high overdrive level.https://blurbusters.com/faq/lcd-overdrive-artifacts/. So I think the only way to lower this overshoot is by lowering the overdrive however I could be wrong, I am not very knowledgeable in this but this is what I assume.

Set your 3d resolution to 100% it is set to 44% which is why everything looks so pixelated. I believe this happened when you set the quality preset to low which sets the 3d resolution much lower making your game look really bad.
