Those are definitely photoresistors. Interesting that you seem to get response times different than spec. Regardless, I strongly recommend photodiodes instead for various reasons including much lower response times, and less sensitivity to incident light. Then again, I've never used either so YMMV ...

I was just curious which photodiode so that I could look up its datasheet. Just like with any electrical component there are many parameters that can make a difference depending on the application. But I'm guessing their response times are typically in the ns or low us range anyway which is fine ...
