The 12700k does perform better in those games. I have a 5600X and i'll personally never buy another AMD CPU again unless they get rid of the infinity fabric. Ryzen CPUs perform terribly in latency sensitive games that don't fit in the cache because of the infinity fabric latency. That's also why I have absolutely zero interest in Zen 4 CPUs.
Here's an example of Ryzen's Infinity fabric latency being a problem. 9900KS vs 5900X both running tuned dual-rank b-die RAM in Battlefield 4.
Look at the framerate when the helicopter is looking in the direction of those two buildings in the center of the map.

What exactly is misleading in what I wrote? That 5900x footage was taken from a competitive battlefield player's stream (his name is Silk). The problem is probably your motherboard/skill at tuning ram. I have 2 b.die kits. 2x8gb 3600c16 and 2x16gb 3200c14. Both feel good, run same timings/freq. 2x8gb kit can run 1T G1 at max frequency imc can handle and requires a little less voltag, but that's it.
My end config for both kits is 3900c15 with the exact same sub timings. Mouse feels exactly the same.
