Movement lag tester based on input lag testers?

I was watching battlenonsense yt channel tests for mouse movement latency.
I was wondering if it would be possible to have similiar but less advanced device, but still with enough accuracy to tell differences between different systems for mouse movement latency and for general investigating weird issues like EMI/RFI.
He uses 1000fps cam and home made device using solenoid to move "mousepad" under mouse.

Would it be possible to have accurate results for movement latency using 2-4 sensors like leo bodnar ones or whatever is best one in todays market?
It all would be connected to some simple device like raspberry pi.
Also simulating movement inputs for mouse would be done by raspberry.

Raspberry would send signals for movement and get data from all sensors and store it to export for future analysis.
Then do test multiple times and compare it.
Setting up tests would be definitely harder to have color change exactly as we want in several places on the monitor, that would probably need running some application that would change color in specific place when cursor is over it.

My only fear is testing in environment with EMI/RFI, device like raspberry could be also affected. However it is hard to tell until someone tries that in such environment.
