I go the new corsair 8k budget mouse and trying to figure out the best pooling rate for it here are the graphs for 2K, 4K, and 8k
do you guys think 8K is worth it, I don't think the mouse can even get up to 8K it is almost acting like it is a 4K pooling rate

A lot of these problems are USB port related, try a different USB port, and/or use a PCIe USB card.
Also, 2000 Hz still gives you 90% of the benefit of 8000 Hz.
Only a few systems are actually 8KHz-ready.
