I am having trouble find mice with a true 1000hz polling rate so my question is,
Is 1000hz polling rate really worth it for 1080p g-sync 144hz?
I don't think I will use ULMB so will 500hz really be that much worse then 1000hz for those specs?
Is the polling rate as important as say adjustable weight, comfort, programmable buttons, etc.
I see mice like the G502 Proteus or SteelSeries Rival 600 and they seem great but I don't think they have a true 1000z polling rate so idk what to do lol.

What do you mean true 1000hz? both of those mice do 1000hz.
Is it worth using a 1000hz? It's very difficult to notice the difference between 500hz and 1000hz and most of it comes down to micro stuttering effect that is caused by a 500hz pollingrate on a 144hz screen shown here:

1000Hz polling rate is a noticeable improvement over 500Hz at 144Hz G-Sync.

If you use G-SYNC, then yes.
1000Hz does help G-SYNC.

I thought SteelSeries Rival 600 was already 1000 Hz. Where did you read that they didn't do 1000 Hz?
Most modern gaming mice already do 1000 Hz today.

As for if it can't hit a stable 1000hz polling rate I don't think I heard anywhere that specifically said that the SteelSeries Rival 600 can't do 1000hz.
But I have read on sites like reddit and others that people have a heard time getting there mice to work properly at 1000hz polling rate see here:

I believe that most of the confusion comes from the fact people believed that high polling rates will cause more jitteyness as you will get more noise from a higher frequency signal. Idk a good way to explain it but you will always get a cleaner LOOKING signal if you average your results out.
It's like when you use 12,000dpi and try and draw a line, you will see a lot more imperfections and bumps in your drawing compared to a 800dpi line. But they are the same line just one has more samples.
