Gsync With way lower frames
Is it better to use gsync on a 240hz when getting only 180 frames or is it better to Set the Monitor to 144 and Limit frames slightl below that ?

The former.
For lowest lag and smoothest operation:
1. VRR capping is simply a pick-poison effect to avoid a worse latency (framerates above Hz often goes into a VSYNC ON mode)
2. Get a monitor with a VRR range bigger your frame rate range
3. Run VRR at max Hz, and your framerate well below Hz.
The first step you describe is exactly what VRR is precisely fantastic for.
That's why if your average frame rates are 250fps or 280fps, it's better to have a 280Hz or 360Hz monitor, than a 240Hz monitor, if you're a big fan of VRR. But if your average frame rate is only 180fps, then anything 240Hz or higher should be fantastic for you, if you're a fan of VRR look-and-feel.
VRR is beautifully near-zero-latency if you make sure your VRR range is much bigger than your framerate range, so you never have to cap. Most CS:GO players turned off VRR because CS:GO wants to run at framerates above VRR range.
