hello I have a 144hz monitor.
In the nvidia control panel when I select gsync, it is automatically placed:
preferred update frequency: the highest available. I always used it like that, but I was in doubt, then;
Should I leave it like this or is it better to be controlled by the 3d application?

G-SYNC Preferred Refresh Rate
“Highest available” automatically engages when G-SYNC is enabled, and overrides the in-game refresh rate selector (if present), defaulting to the highest supported refresh rate of the display. This is useful for games that don’t include a selector, and ensures the display’s native refresh rate is utilized.
“Application-controlled” adheres to the desktop’s current refresh rate, or defers control to games that contain a refresh rate selector.
Note: this setting only applies to games being run in exclusive fullscreen mode. For games being run in borderless or windowed mode, the desktop dictates the refresh rate.

And also keep in mind that with g-sync, the higher the refresh rate, the better. G-sync prefers to run at the monitor's highest refresh rate. When you want to get lower FPS than the monitor's max hz, then cap the FPS instead of lowering the refresh rate.

Should I cap the fps to the minimum that the game gives or to -3 of the monitor frequency? (for example FH4 gives me a minimum of 130fps and variable up to a maximum of 144fps at times)

Whatever you prefer. I like to cap near the FPS the game can reach the majority of the time so that it feels more consistent. I don't like it when the framerate suddenly goes from 160 to 80 for example. I would cap that game to 100 because FPS fluctuation between 80 and 100 feels better to me compared to 80-160.

The -3 FPS limit isn't recommended for consistency reason, it's only to keep the framerate within the refresh rate to ensure G-SYNC remains engaged at all times in the cases that the framerate can exceed the refresh rate without a limit.
Like RealNC said, a lower limit for a maintainable average FPS is up to preference, and can be game-dependent.
