This is theory. This has not been tested in practice. Because this is a meaningless combination. Or were you bored and checked it out?

But you're right, it hasn't been thoroughly tested, so it could vary by the game implementation. With G-SYNC, it could either act like V-SYNC off, or override the adaptive behavior and simply act like V-SYNC on.
Either way, it is indeed a pointless combo.

For 240hz+ monitors I think "On" might be better than "Ultra" due to the latter cutting down too many frames on faster displays. On my 360hz OLED I get capped to 327fps, which is alot compared to slower rates.
The V-Sync lag penalty will be there of course, but at 360hz the extra latency caused by enqueued frames is very small and negligible, in my opinion.
On 480hz displays I imagine it's going to get capped to around 420fps, a full 60hz frame less than what you paid for.
