What is your professional opinion regarding the best monitor of these?

The XL2411Z and the XL2430T are pretty much identical but the newer 30T has a few new features like a USB ports and a little controller thing if you want that :S
The VG248QE is pretty good contender. I would just go online and find small things you like about each of them and buy the one you like the most

Which one has the lowest input lag?
I'm also curious if anyone knows which one would be better for source switching as I game between console and PC too.

I have it. Use it for consoles, mostly. There's nothing wrong with it certainly. Build quality is very nice.
