This is certainly a strange question, but will there be a difference between a 60hz monitor and a 240hz monitor, but in the settings it is set to 60hz
No. Unless you either use a VRR 60FPS cap (g-sync/freesync) or you use a 60Hz mode with a 240Hz VT. In these cases, you will get quite lower input lag.
Note that on some 240Hz monitors, the default 60Hz mode is worse than the 60Hz mode of other monitors.
