1) Are the "modes" such as FPS and Standard just presets of different OSD settings (like brightness, contrast, gamma, instant mode, etc...)? [My testing would suggest so, unless something else is happening under the hood].
2) Also, you mentioned in another post that setting the contrast to 0 on the 2720Z defeated the color advantage of the 27" panels over the 24" panels? 
3) I re-ordered the 2730Z, should I be using High or Premium AMA, and when using BBR, should I "retoggle" premium or high AMA?

I can't answer any questions abut the 2730Z because that's a completely different panel than the 2720Z.
The 2730Z is an 8 bit TN panel, while the 2720Z is a 6 bit+FRC panel
No one has done a hard proper review of this panel yet (the one review out there is, well...sort of a joke, IMO. They even said that "Blur reduction is more of a "curiousity" than useful". So how it responds to gamma and refresh rate changes is still unknown. A second review was in a foreign language.
Also unknown if it has AMA settings that are changed when toggling AMA after Blur reduction is enabled. No one has even tested any of that. Unknown if vertical total tweaks work or not. Vertical total tweaks are a BIG thing with the older Z series as they improve strobe crosstalk at the bottom of the screen _considerably_ by extending the blanking interval. We need to know if VT tweaks work with the 2730Z, also, and what ranges and what effect it has (and it should require the amd/NVidia pixel clock patchers also).
There was a review in a foreign language, which took pictures of strobe mode at least and the effect of changing "Area" (strobe phase). Only thing I could see from that was it looked like 2720Z with V4....

It's probably accessed by holding down MENU+ENTER for 5 seconds, with power off and then holding power on at the same time.
(at least a shortened version of this menu is accessed this way on XL2720Z).

I'm now pretty pissed with BENQ quality control. Replacement monitor works as intended WITH A DEAD PIXEL, and DARK SPOT AROUND PIXEL. WTF BENQ?

Did you get the monitor from Benq or Amazon?
I don't think Benq themselves are responsible for dead pixels from bad QA. They DO QA test the monitors before they get shipped out.
And the problem isn't related to Benq so its unfair to single them out, unless you actually bought one directly from their main warehouse and they were actually defective there. But some monitors do develop a dead pixel just to defects in the technology, but they were probably not dead when the panel was assembled. It happens.
A lot of defective monitors become defective due to damage during transit. The box might look fine but those things may get dropped anywhere. I had an Asus VG248QE that had a completely screen long vertical red pixel bar from top to bottom, that showed up even when the monitor was unplugged and when it was powering on. That thing was definitely dropped somewhere. I was not happy when I got it but welp, panel lottery. RMA"d it and got a perfect one back.
Did you see the Acer thread on OCN or the ROG Swift threads? Everyone is getting ruined by the panel lottery randomly. it sucks but it happens.
I've owned five total LCD screens. Two of them have/had a dead pixel (actually one of them had a stuck pixel) and three of them were fine. The stuck subpixel developed after some time.
