With vsync, cap only slightly below 240. Like 239.5. (Or if you want to do the best cap possible, then read this post.)

Without vsync, then it's best to get as high FPS as you can in CPU-bound games. In GPU-bound games, cap as high as you can to get the most FPS possible without maxing out the GPU.
